Butternut & Squash Soup
Ingredients:
3 tbsp butter
2 sweet white onions
1/2 tsp freshly grated nutmeg
2 tbsp fresh garlic peeled and minced
4 1/2 lbs, butternut squash, peeled, seeded & cut into cubes
5 cups of vegetable or chicken broth.
1 cup apple cider
2 sweet apples, we use Gala, peeled, cored & finley diced
1 tbsp maple syrup
Add salt & cracked black pepper for taste
1 cup 35% cream
To garnish ... sour cream and fresh chives, finely diced
Directions:
Melt butter in soup pot over medium-high heat
Add onion, garlic and nutmeg until onions begin to brown, about 5 minutes
Add squash, broth, apple cider, apples and bring to a boil. Reduce to a
simmer once a low boil is acheived and add remaining ingredients, except cream.
To finish add cream to soup to thicken ... simmering for about 10 more minutes
over low heat. Puree with hand held emulsifier or in batches in the
blender.
Laddle into bowls and garnish with sour cream and finley chopped chives.
